HOW TO GET BETTER STEAM WHEN BAKING BREAD
Want to make sure you are providing your bread with enough steam to make a marvelous crust? Or maybe you have tried all the standard tricks but nothing seems to give you the results you want?
Well here is a tip that not many people know about that Chef Pino swears by:
When your oven is at temperature and your bread is ready to bake, add the following items to you standard small tray or cookie sheet :
large screws, nails or pieces of chain - thats right ! a metal CHAIN
and THEN add water to the tray to induce steam.
The extra surface that those objects provide will give off more humidity than just water in a flat surface.
